Recipe: Grilled Cheese & Chicken

Still focused on my weekly (sometimes daily) quest to find new recipes that will appease the picker eater we spoke about last week. Shocking, but I found a new one rather quickly to share with you…and, rejoice, it doesn’t have 25g of fat or 500 calories like that yummy milkshake – ha! Yes, we’re talking grilled cheese but I upped the protein and flavor by adding lived chicken breast…

 

I don’t need to tell you how to make grilled cheese – everyone knows how to make that! All I did here was add sliced chicken breast to his – he goes for american cheese with whole wheat bread.

Once it was golden brown, I cut off the crust (those are mine!) and sliced the mid-section into 3 long strips. It’s interesting my kids are more prone to eat something new when it’s in a unique shape…

I served the sandwich strips with goldfish and a mini-orange. He liked it, but as I figured, didn’t eat the entire plate. At least he tried something new. Don’t worry, a sandwich like this doesn’t go to waste in this house. My 3 year old gobbled up what remained.

If you have a picky eater, but one that likes grilled cheese, consider adding something to it to give the sandwich more nutritional value. This sandwich adds a lot of flavor, but what I liked was that it added more protein to his diet…something I’m always worried about since he’s in love with starchy / high-sugar foods.

    Our local market has nothing but Boar's Head brand I believe. I love their hot dogs, but they are a bit pricey. They have wonderful deli meats. My family purchases quite a bit of various meats.
