If it’s almost August, it’s almost football season. And if it’s almost football season, it’s inching closer to chili season. My favorite season of the year!! I’ve been digging through my favorite fall recipes and wanted to share my favorite white bean chicken chili recipe with you guys. I discovered this recipe in Southern Living, made some small adjustments and it never disappoints!
Chili so good you’ll want seconds? This is it! It’s also healthy and makes enough to have leftovers x 2 or 3…depending on your family size as well as how much you consume on night 1. Ha!
What you’ll need…
Love the smell of onions simmering, don’t you?…
What gives this chili body and texture is the white canellini beans…
Half of the beans are added in whole, while the other half are pureed with chicken broth. This puree gives the chili that thick consistency…
Once everything has been added to the pot…
Just let it simmer a while. Your home will smell amazing…like fall!…and football! But without the sweaty guys.
Of course chili isn’t chili without shredded cheese, sour cream and tortilla chips, right?
